The Panther Press is introducing a new feature, The Snack Spot. In it, we will show you some of the favorite recipes for after-school snacks from our teachers and staff here at Milton.
Nutrition, Food and Wellness Teacher Ms. Krystin Thomas’s favorite after school snack is red pepper hummus. Hummus typically contains chickpeas, sesame paste, lemon juice and garlic. It is often served with pita bread.
Ms. Thomas said she first bought the dish from the store, then tried to make it herself.
From the original recipe, she has changed the amount of time she roasted the bell peppers and has added olive oil, she said.
“When I first made the dish, it was bland and it needed more seasoning,” she added.
According to Ms. Thomas, later when she made it for herself it only took three tries to perfect the recipe.
“The reason why it is my favorite, and I make it for an after school snack is it’s flavorful and nutritious,” she added.
Ms. Thomas said this recipe is best served during spring or summer; you can use different cooking techniques like grilling the bell peppers or putting them in the oven.
Ms. Thomas usually serves this dish by itself, she added.
She found a recipe to use online at immigrantstable.com: “First combine chickpeas, roasted red pepper, garlic, tahini, olive oil, lemon juice, cumin, smoked paprika and cayenne pepper. Blend till smooth and creamy, stopping to scrape the sides down as needed. Transfer hummus to serving bowl and smooth top with spoon drizzle with olive oil and sprinkle with smoked paprika and add additional toppings.”
“This recipe is great for people looking for new recipes because it’s flavorful and you can change whatever you want,” Ms. Thomas explained. “This recipe would be great to try in class.”
